Zucchini Fritters with Cheese

The combination of these zucchini fritters, with the three types of cheese included in the recipe, along with the dressing, will be a memorable experience for your whole family and will become your children's favorite dish. Try it and share with us on social media how it turned out!​

Ingredients:
  • 1/2 kg  of large zucchini

  • 30ml olive oil

  • Salt to taste

  • 1/2 cup breadcrumbs or Panko

  • 1/2 cup oats

  • 1/2 cup grated Mozzarella cheese

  • 1/2 cup grated Manchego cheese

  • 1/2 cup crumbled Panela cheese

  • 2 eggs

For the Dressing:

  • 1/3 cup Greek yogurt or Jocoque

  • 1/3 cup mayonnaise (without lemon)

  • 1/3 cup sour cream

  • 1-2 pieces of Chipotle peppers in Adobo sauce

  • 2 tbsp white wine vinegar

Preparation:
  1. Cut the zucchini into thin slices and mix with olive oil and salt.

  2. Place in an air fryer or oven for 5 minutes at 400°F.

  3. Remove, drain excess liquid, and mix in a food processor with the rest of the ingredients.

  4. Once everything is mixed, form small mounds in the shape of fritters. You can use a small spoon to help.

  5. Place in an air fryer for 15 minutes at 390°F; or in the oven for 10 minutes at 450°F.

  6. For the dressing, mix all ingredients in a blender.

  7. To serve, spread the dressing on a plate and place the fritters on top. Can be accompanied with arugula.

Zucchini Carpaccio

Zucchini Carpaccio is perfect to pair with wine or as an appetizer for a spectacular meal. It's both healthy and delicious.​

Ingredients:
  • 2 large zucchinis

  • 15 ml of olive oil

  • Salt, to taste

  • 40 g of arugula

  • 120 g of goat cheese

For the Vinaigrette:

  • 2 tbsp of olive oil

  • 2 tbsp of vegetable oil

  • 1 tbsp of honey

  • 1 tbsp of balsamic vinegar

  • 1/2 tsp of yellow mustard

Preparation:
  1. Slice the zucchinis into thin rounds and toss them with olive oil and salt.

  2. Place the mixture in an air fryer or oven for 5 minutes at 350ºF.

  3. Remove and let it cool.

  4. Make the vinaigrette by mixing all the ingredients in a jar and shaking for 2 minutes until fully combined.

  5. Serve the thin zucchini slices on a plate and drizzle with the vinaigrette.

  6. Garnish with goat cheese and arugula.

Zucchini Chips

Ingredients:
  • 2 large zucchini

  • Olive oil spray

  • Salt, to taste​

Preparation:
  1. Slice the zucchinis into thin rounds.

  2. Toss the slices with olive oil and salt.

  3. Place the mixture in your air fryer or oven for 10 to 15 minutes at 390ºF.

  4. Serve and enjoy with your favorite sauce or dressing.

Zucchini and Chocloate Muffins

*12 pieces.

Ingredients:
  • 1 and 3/4 cups of Flour

  • 1/2 cup of oats

  • 1 tsp of baking powder

  • 1 tsp of ground cinnamon

  • 3/4 cup of monk fruit sweetener

  • 1/2 tsp of salt

  • 2 tsp of vanilla

  • 1/2 cup of applesauce

  • 1 Banana

  • 1/2 cup of milk

  • 2 large eggs

  • 1 cup of grated zucchini (measure before removing moisture)

  • 1/2 cup of chocolate chips

  • 1 tbsp of unsalted butter

Preparation:
  1. Grate the Zucchini. Use a box grater to shred the zucchini and then squeeze out as much excess liquid as possible with your hands, cheesecloth, or a paper towel (don't skip this step). Set aside.

  2. Dry ingredients: combine the dry ingredients in a medium bowl. Stir to combine with a fork or whisk to ensure there are no lumps. Set aside.

  3. Wet ingredients: Take a large bowl and add the vanilla extract, applesauce, mashed banana, and milk. Stir to combine.

  4. Beat the eggs in a separate container and then add them to the applesauce mixture. Stir to combine.

  5. To finish the muffin batter, add the zucchini and chocolate chips to the applesauce mixture and incorporate. Add the dry ingredients to the mixture and stir to combine. Add the melted butter and stir a few times.

  6. Bake. Divide the batter among 12 prepared muffin cups. Bake on the middle rack for 18 to 22 minutes, or until a toothpick inserted comes out clean.

  7. Let cool. Carefully remove and let cool for 10 minutes in the muffin tin, then transfer to a cooling rack. Enjoy!
